Quick and Easy Beef and Rice




This recipe is adapted from my quick and easy barley dinner. We have really enjoyed the barley version, but I have wanted to try adapt this dish using rice for a long time. Since I can no longer have barley, it was a good time to finally give a rice version a try.

This turned out really good. My whole family liked this. This is a great meal to make on a very busy night. This is not a fancy dish, but it is a good meal. Serve this with some bread and a vegetable or salad and you have a really nice meal.


Easy Beef and Rice

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 1 can (14 ounces)diced tomatoes with liquid
  • 2 cups beef broth ( I make mine by using water and beef bouillon or base)
  • 1 cup rice
  • 1 teaspoon chili powder

In a large skillet, cook ground beef with onion until the meat is no longer pink; drain. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for about 20 minutes or until rice is tender.
